Ratatouille : made from tomatoes, aubergines, zucchini, peppers and onions, all fresh and of Provençal or Mediterranean origin. These selected vegetables are washed and trimmed before being chopped. The tomatoes are seeded beforehand, the peppers are trimmed and seeded, the onion and the spices, scorched in the olive oil. The whole is then steamed. Heat our ratatouille niçoise in a saucepan over low heat and accompany your red or white meats, incorporating their cooking juices, which you have reserved. If you don’t have meat as a side dish, our Nice ratatouille will make your feast simply warmed, and drizzled with olive oil.
