What is a Calisson?
The Calisson d'Aix is a sweetness that has existed since the 19th century. The calissonnier prepares the calisson paste by mixing the candied melons, the candied orange peels, the candied fruit syrup and the pruned and white almonds.
Maison Léonard Parli is the only one that still preserves its fruit to prepare the Calisson paste: a guarantee of quality and traceability. This delicious paste with a unique taste is placed on a thin sheet of host and covered with royal frosting in very pure white. At Léonard Parli's, the use of a traditional machine with its large granite rolls produces a beautiful calisson paste rich in taste, which preserves the texture of all the ingredients.
Maison Léonard Parli was founded in 1874. The company was taken over by the Gignoux family in 2018, who strive to respect and enhance the historical know-how of the Parli Factory.
